Ingredients

  • 4 pieces large portobello mushrooms
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon liquid smoke
  • 2 tablespoons dijon mustard
  • 2 sprigs fresh rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 3 pieces carrots
  • 2 pieces celery stalks
  • 4 pieces yellow potatoes
  • 1 piece red onion

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the portobello mushrooms with a damp cloth and remove the stems. Create a marinade by combining olive oil, soy sauce, liquid smoke, dijon mustard, garlic powder, onion powder, and ground black pepper in a small bowl.

Step 3

Brush the marinade generously over the mushrooms, ensuring even coverage. Let them marinate for at least 15 minutes.

Step 4

While the mushrooms are marinating, peel and dice the carrots and potatoes into large chunks. Slice the celery and red onion.

Step 5

In a large ovenproof dish, spread the diced vegetables evenly. Pour the vegetable broth over them and scatter the fresh rosemary on top.

Step 6

Take the marinated portobello mushrooms and place them cap side up over the vegetable mixture in the dish.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 8

Remove the foil and bake for an additional 15-20 minutes, or until the vegetable edges are golden and the mushrooms have a rich, roasted color.

Step 9

Let it rest for a few minutes before serving. Serve the Vegetarian Schweinshaxe with your favorite side dishes.
