Ingredients

  • 1 can (15 oz) Chickpeas
  • 1 cup Breadcrumbs
  • 1 medium, grated Carrot
  • 1 medium, grated and excess moisture removed Zucchini
  • 0.5 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 0.5 cup, grated Parmesan cheese
  • 1 large Egg
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon, dried Oregano
  • 1 teaspoon, dried Basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Drain and rinse the chickpeas from the can. Place them in a food processor and pulse until they are slightly mashed, but still a bit chunky.

Transfer the mashed chickpeas to a large mixing bowl. Add breadcrumbs, grated carrot, grated zucchini (make sure to squeeze out excess moisture), chopped onion, minced garlic, grated Parmesan cheese, egg, fresh parsley, dried oregano, dried basil, salt, and black pepper.
