Ingredients

  • 14 oz extra firm tofu
  • 8 oz cremini mushrooms
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 2 tbsp nutritional yeast
  • 1 cup breadcrumbs
  • 1 serving egg replacer
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Press the tofu to remove excess water: Wrap in a clean towel and place a heavy weight on top for 10 minutes.

Step 3

Meanwhile, chop the cremini mushrooms finely using a food processor or by hand.

Step 4

In a large skillet, heat olive oil over medium heat. Add the chopped onions and cook until softened, about 3 minutes.

Add the garlic and cook for an additional 30 seconds until fragrant, then add the chopped mushrooms.

Cook the mushrooms until they release their moisture and it evaporates, about 5-7 minutes.

Transfer the mixture to a large bowl. Crumble the tofu and add it in along with the soy sauce, thyme, sage, nutritional yeast, breadcrumbs, egg replacer, salt, black pepper, and parsley.

Mix everything until well combined. The mixture should hold together when pressed.

Scoop about 1-tablespoon portions of the mixture and form them into balls or patties, placing them on the prepared baking sheet.

Bake in the preheated oven for 20-25 minutes until golden brown and firm to the touch.
