  • 1 medium carrot, grated
  • 400 grams canned lentils, drained and rinsed
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sheets frozen puff pastry sheets, thawed
  • 2 tablespoons milk, for brushing

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for about 5 minutes until soft and translucent.

Stir in minced garlic and cook for an additional minute until fragrant.

Add chopped mushrooms and grated carrot to the skillet. Cook for 7-8 minutes, stirring frequently, until the mushrooms release their moisture and turn golden.
