Ingredients

  • 4 cups all-purpose flour
  • 1 packet instant yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1.5 cups warm water
  • 3 tablespoons olive oil
  • 1 large, chopped onion
  • 3 minced garlic cloves
  • 2 cups mixed vegetables
  • 1 cup cooked lentils
  • 2 tablespoons soy sauce
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 0.5 cup, chopped cilantro
  • 1 tablespoon sesame oil

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, instant yeast, sugar, and salt. Mix well to incorporate dry ingredients.

Step 2

Add warm water and 2 tablespoons of olive oil to the dry ingredients. Mix and knead the dough for about 10 minutes until smooth and elastic.

Step 3

Cover the dough with a clean kitchen towel and let it rest in a warm place for about 1 hour or until doubled in size.

Step 4

Meanwhile, heat the remaining 1 tablespoon of olive oil in a frying pan over medium heat. Add chopped onion and minced garlic, sauté for 3-4 minutes or until onion is translucent.

Step 5

Stir in mixed vegetables and cook for 5 minutes until they begin to soften.

Step 6

Add cooked lentils, soy sauce, cumin, smoked paprika, black pepper, and red pepper flakes. Mix well and cook for an additional 5 minutes, stirring occasionally.

Step 7

Remove the pan from heat and stir in chopped cilantro and sesame oil. Allow filling to cool slightly.

Step 8

Preheat the oven to 375°F (190°C).

Step 9

Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball.

Step 10

Flatten each dough ball into a circle about 4 inches in diameter. Place a generous tablespoon of filling in the center of each circle.

Step 11

Bring the edges of the dough over the filling, pinching them together at the top to seal and form a bun.

Step 12

Place the buns, seam side down, on a baking sheet lined with parchment paper.

Step 13

Brush the tops of the buns with a little water or additional olive oil for a shiny finish.

Step 14

Bake in the preheated oven for 20-25 minutes or until the buns are golden brown.

Step 15

Allow buns to cool for a few minutes before serving. Enjoy your homemade vegetarian savory meat buns!
