Ingredients

  • 2 tablespoons olive oil
  • 1 large, finely chopped yellow onion
  • 3 minced garlic cloves
  • 1 medium, finely diced carrot
  • 1 medium, finely diced celery stalk
  • 14 ounces vegetarian ground meat
  • 1 15-ounce can canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup vegetable broth
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the finely chopped onion, minced garlic, diced carrot, and diced celery to the skillet. Sauté for 5-7 minutes until the vegetables are softened.

Step 3

Increase the heat to medium-high and add the vegetarian ground meat, breaking it up with a spoon. Cook for 5-7 minutes until it is browned.

Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, dried thyme, red pepper flakes, salt, and black pepper. Mix well to combine.

Step 5

Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low and let it gently simmer for 15 minutes, stirring occasionally, until the sauce has thickened.

Step 6

Taste and adjust seasoning if necessary.

Step 7

Remove from heat and stir in the chopped fresh parsley.

Step 8

Serve the savory ground meat in tomato herb sauce over your choice of pasta, rice, or use as a filling for stuffed vegetables.
