Ingredients

  • 2 pieces large flour tortillas
  • 3 pieces eggs
  • 2 tablespoons milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon butter
  • 0.5 cup red bell pepper, diced
  • 1 cup fresh spinach leaves
  • 2 pieces green onions, sliced
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa
  • 1 tablespoon olive oil

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 2

Heat a non-stick skillet over medium heat and add the butter. Once melted, pour in the egg mixture.

Step 3

Cook the eggs, stirring occasionally, until they are softly scrambled. Remove from heat and transfer to a plate.

In the same skillet, add olive oil and sauté the diced red bell pepper for about 2-3 minutes until softened.

Add the fresh spinach leaves and sliced green onions to the skillet with the bell pepper and cook for an additional 1-2 minutes until the spinach is wilted. Remove from heat.
