Ingredients

  • 2 units Vegetarian sausage patties
  • 2 units Large eggs
  • 2 slices Cheddar cheese slices
  • 2 units English muffins
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat a non-stick skillet over medium heat and add the vegetable oil.

Step 2

Place the vegetarian sausage patties in the skillet and cook for 3-4 minutes on each side or until heated through and lightly browned. Remove from the skillet and set aside.

Step 3

Butter both halves of the English muffins and place them, buttered side down, in the same skillet. Toast for 2-3 minutes until golden brown. Remove and set aside.

Step 4

In the same skillet (or a new one if preferred), crack the eggs carefully into the pan. Season with salt and black pepper.

Step 5

Cook the eggs for about 2-3 minutes until the whites are set, and then gently flip them to cook the other side for another 1-2 minutes, keeping the yolks runny.

Step 6

As the eggs cook, place one slice of cheddar cheese on top of each cooking egg to melt slightly.

Step 7

To assemble the sandwich, place one vegetarian sausage patty on the bottom half of each English muffin.

Step 8

Top with the cheddar-topped egg, then add the top half of the English muffin.
