  • 4 pieces Large Flour Tortillas
  • 1 tablespoon Olive Oil
  • 1 large Red Bell Pepper
  • 1 large Green Bell Pepper
  • 1 medium Yellow Onion
  • 15 ounces Canned Black Beans
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Sour Cream
  • 0.5 cup Salsa
  • 0.25 cup Fresh Cilantro

Directions

Step 1

Prepare the vegetables: finely chop the red bell pepper, green bell pepper, and onion.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chopped onions and cook until translucent, about 3-4 minutes.

Step 3

Add the chopped red and green bell peppers to the skillet and cook for another 5 minutes, stirring occasionally, until they begin to soften.

Slice the vegetarian sausages into bite-sized pieces and add them to the skillet, cooking until browned and heated through, about 5-7 minutes.
