Ingredients

  • 4 links vegetarian sausages
  • 1 large red bell pepper
  • 2 cups broccoli florets
  • 1 medium carrot
  • 1 cup snow peas
  • 1 small red onion
  • 3 cloves garlic
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • 1 teaspoon ginger
  • 1 tablespoon sesame seeds
  • 2 stalks scallions

Directions

Step 1

Slice the vegetarian sausages into 1/2-inch rounds.

Step 2

Chop the red bell pepper into thin strips, and cut the broccoli florets into bite-sized pieces.

Step 3

Peel and slice the carrot into thin rounds. Trim the snow peas. Slice the red onion thinly.

Step 4

Mince the garlic cloves and ginger. Slice the scallions into thin rounds and set aside.

Step 5

In a small bowl, mix the soy sauce, sesame oil, cornstarch, and water to make the stir-fry sauce. Stir until the cornstarch is completely dissolved.

Step 6

Heat a large, non-stick skillet or wok over medium-high heat.

Step 7

Add the sliced vegetarian sausages to the skillet and cook for 3-4 minutes until they are browned on both sides. Remove from skillet and set aside.

In the same skillet, add a splash of sesame oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Return the cooked sausage to the skillet and pour the stir-fry sauce over everything.

Continue to cook for 2-3 minutes, stirring frequently, until the sauce thickens and evenly coats the ingredients.

Step 13

Remove from heat, sprinkle with sesame seeds and scallions before serving.
