Ingredients

  • 12 oz Rotini pasta
  • 2 tbsp Olive oil

  • 1 large Bell pepper, chopped
  • 1 large Carrot, diced
  • 12 oz Plant-based ground 'meat'
  • 28 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Red pepper flakes (optional)
  • 2 tbsp Fresh parsley, chopped
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Fill a large pot with salted water and bring to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add minced garlic, chopped bell pepper, and diced carrot to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
