Ingredients

  • 500 grams Rechta noodles (or fresh flat noodles)
  • 3 tablespoons Olive oil
  • 1 large, chopped Onion
  • 2 medium, sliced into sticks Carrots
  • 1 large, diced Turnip
  • 2 medium, sliced Zucchini
  • 200 grams, cooked or canned Chickpeas
  • 2 tablespoons Tomato concentrate
  • 2 cloves, minced Garlic
  • 1 teaspoon Ground coriander
  • 1 stick Cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 liters Water or vegetable broth
  • 1 bunch, chopped Parsley

Directions

Step 1

Begin by preparing the vegetables. Chop the onion, slice the carrots and zucchini into sticks, and dice the turnip.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Incorporate the minced garlic, ground coriander, and stir for an additional 1 minute, ensuring not to burn the garlic.

Step 4

Add the tomato concentrate, stirring well to combine, and then introduce the carrots, turnip, and zucchini. Stir to coat the vegetables with the tomato mixture.

Step 5

Pour in the water or vegetable broth, add the cinnamon stick, salt, and black pepper. Bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.

Step 7

Add the cooked chickpeas to the pot, stirring well. Continue to simmer for an additional 10 minutes.

Step 8

In the meantime, prepare the rechta noodles. If using fresh dough, roll into thin sheets and cut into broad strips.

Step 9

Steam the rechta noodles over a pot of boiling water using a steamer basket. It should take about 15-20 minutes for the noodles to fully cook and soften.

Step 10

Gently mix the steamed rechta noodles into the pot with the vegetable stew, ensuring everything is well combined.

Step 11

Allow the flavors to meld for 5 minutes on the stove over low heat before serving.

Step 12

Garnish with freshly chopped parsley and serve hot. Enjoy your Vegetarian Rechta with family and friends!
