Ingredients

  • 2 cups masa harina
  • 1.5 cups warm water
  • 0.5 teaspoons salt
  • 1 cup refried black beans
  • 1 cup shredded mozzarella cheese (or any other melting cheese)
  • 0.5 cup cooked and chopped spinach
  • 2 tablespoons olive oil

Directions

Step 1

In a large bowl, combine the masa harina and salt. Gradually add the warm water while mixing with your hands until a smooth and soft dough forms. The dough should be moist but not sticky. Cover the bowl with a damp cloth and let it rest for 15 minutes.

Step 2

In a separate bowl, mix together the refried black beans, shredded cheese, and chopped spinach until well combined. This will be the filling for the pupusas.

Step 3

Divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it into a disc about 4 inches in diameter.

Place about 2 tablespoons of the filling in the center of each disc. Carefully bring the edges of the dough over the filling to encase it, pinching and sealing the edges together. Once sealed, gently flatten the filled dough ball into a thick disc about 5 inches in diameter, being careful not to spill the filling.
