Ingredients

  • 2 pieces Whole wheat tortilla
  • 0.5 cup Marinara sauce
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Red bell pepper, thinly sliced
  • 0.5 cup Green bell pepper, thinly sliced
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Black olives, sliced
  • 0.5 cup Cherry tomatoes, halved
  • 1 cup Spinach leaves
  • 0.5 teaspoon Dried oregano
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Place one tortilla in the skillet and lightly toast each side for about 30 seconds. Repeat with the second tortilla and set aside.

Step 3

In the same skillet, pour another tablespoon of olive oil and add the sliced red bell pepper, green bell pepper, and red onion. Sauté for 4-5 minutes until the vegetables are slightly tender.

Lay each tortilla flat and spread 1/4 cup of marinara sauce evenly over each.

Divide the sautéed vegetables evenly between the two tortillas.

Place the wraps back in the skillet seam side down and cook for 2-3 minutes on each side until the cheese is melted and the wrap becomes golden brown.

Once done, transfer the wraps to a cutting board, let them cool slightly, then slice each wrap in half and serve.
