Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 large yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 3 large ripe tomatoes
  • 3 garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 eggs
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and thinly slice the onion.

Step 2

Core and thinly slice the red, green, and yellow bell peppers.

Step 3

Score a shallow 'X' on the bottom of each tomato, place in boiling water for 30 seconds, then transfer to cold water. Remove skins, core, and chop the tomatoes.

Mince the garlic cloves.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook until softened, about 5 minutes.
