  • 1 tablespoon Chickpea flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 3 quarter cups Vegetable broth
  • 2 tablespoons Soy sauce
  • 1 teaspoon Liquid smoke
  • 2 tablespoons Olive oil
  • 1 cup BBQ sauce
  • 1 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the vital wheat gluten, chickpea flour, garlic powder, onion powder, smoked paprika, and black pepper.

Step 2

In a separate bowl, whisk together the vegetable broth, soy sauce, liquid smoke, and olive oil.

Step 3

Pour the wet ingredients into the dry ingredients and stir until a dough forms.

Step 4

Knead the dough for about 5 minutes, until it becomes firmer and elastic.

Step 5

Shape the dough into a flat rectangle, about 1 inch thick, and set aside.

Step 6

Preheat your grill to medium heat.

Step 7

Place the seitan rectangle on a piece of foil and wrap it loosely, allowing some space for expansion.

Place the foiled seitan ribs on the grill and cover. Grill for 30 minutes, flipping halfway through.
