Ingredients

  • 12 ounces Pasta (tagliatelle or fettuccine)
  • 1 small Black truffle

  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain the rest.

Step 2

While the pasta cooks, finely shave the black truffle using a truffle slicer or a sharp knife. Set aside a small amount for garnish.

In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté until fragrant, about 1 minute. Do not let the garlic brown.
