Ingredients

  • 1 medium zucchini, sliced
  • 1.5 cups cherry tomatoes, halved
  • 2 cups spinach leaves, fresh

  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup fresh basil leaves, chopped
  • 1 lemon, juiced

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
