Ingredients

  • 2 minced garlic cloves

  • 150 grams, finely chopped button mushrooms
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • 2 tablespoons soy sauce
  • 50 grams rolled oats
  • 100 grams breadcrumbs
  • 400 gram can, drained and mashed chickpeas
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sheets ready-rolled puff pastry
  • 1 beaten (for wash, optional for vegetarians) egg
  • 1 tablespoon sesame seeds

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

In a large frying pan, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

Step 3

Stir in the grated carrot and finely chopped mushrooms. Cook for another 5-7 minutes until the mushrooms have softened and released their moisture.

Step 4

Add the ground cumin, ground coriander, and dried thyme to the pan. Cook for an additional 2 minutes to toast the spices.

Stir in the soy sauce and remove the mixture from heat, allowing it to cool slightly.

In a large mixing bowl, combine the vegetable mixture with rolled oats, breadcrumbs, mashed chickpeas, chopped parsley, salt, and black pepper. Mix until all ingredients are well incorporated.
