Ingredients

  • 1.5 cups Basmati rice
  • 3 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 medium Carrot, diced
  • 1 medium Red bell pepper, diced
  • 0.5 cup Green peas, frozen
  • 1 small Onion, finely chopped
  • 3 Garlic cloves, minced
  • 1 cup Cherry tomatoes, halved
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the basmati rice under cold running water until the water runs clear. Drain and set aside.

Step 3

In a large oven-proof pan or a casserole dish, heat the olive oil over medium heat on the stove.

Add the chopped onion and garlic to the pan and sauté for 2-3 minutes until the onion becomes translucent.

Stir in the diced carrot and red bell pepper, and cook for another 3-4 minutes until they start to soften.
