  • 500 grams Okra
  • 250 grams Plant-based minced meat
  • 2 tablespoons Olive oil

  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 400 grams (canned or fresh) Diced tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Coriander powder
  • 200 milliliters Vegetable broth
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the okra under cold running water and pat dry. Trim the stems of the okra while keeping the pods intact.

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the okra and sauté for about 5-7 minutes until they are lightly browned and tender. Remove from the pan and set aside.

Step 3

In the same pan, heat the remaining 1 tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
