Ingredients

  • 4 large Portobello mushrooms
  • 3 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 2 tablespoons Soy sauce
  • 1 tablespoon Balsamic vinegar
  • 4 slices Swiss cheese
  • 4 Whole grain buns
  • 4 pieces Lettuce leaves
  • 1 medium Tomato
  • 1 small Onion
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Clean the Portobello mushrooms by wiping them with a damp paper towel to remove any dirt. Remove the stems and set the caps aside.

Step 2

In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, soy sauce, and balsamic vinegar.

Step 3

Brush the mixture onto both sides of each mushroom cap and let them marinate for at least 10 minutes.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the mushroom caps, gill-side up, and cook for 4-5 minutes or until they begin to soften.

Step 5

Flip the mushrooms and cook for an additional 4-5 minutes. Place a slice of Swiss cheese on each mushroom cap, allowing it to melt as the mushroom finishes cooking.

Step 6

While the mushrooms are cooking, prepare the toppings: wash and dry the lettuce leaves, slice the tomato, and slice the onion thinly.

Step 7

Toast the whole grain buns on a grill or in a toaster for a minute or until lightly golden.

Step 8

Assemble the burgers by placing a mushroom cap with melted Swiss cheese on the bottom half of each bun. Layer with lettuce, tomato slices, and onion rings.

Step 9

Sprinkle with salt and black pepper to taste. Cover with the top half of the bun.

Step 10

Serve immediately and enjoy your Vegetarian Mushroom Swiss Burger.
