Ingredients

  • 2 cups black-eyed peas
  • 1 medium onion
  • 1 large red bell pepper
  • 1 medium habanero pepper
  • 0.5 cup vegetable oil
  • 1 teaspoon salt
  • 1 unit vegetable bouillon cube
  • 3 cups water
  • 6 pieces foil sheets

Directions

Step 1

Start by soaking the black-eyed peas in water for at least 8 hours or overnight. Once soaked, rinse the beans thoroughly to remove the skins.

Step 2

Blend the peeled black-eyed peas with 1 cup of water until very smooth. For best results, work in batches if necessary to ensure a smooth consistency.

Step 3

Dice the onion and red bell pepper. Remove seeds from the habanero pepper and chop.

Step 4

Blend the diced onion, red bell pepper, and habanero pepper with 1 cup of water until smooth.

Step 5

In a large mixing bowl, combine the blended beans with the blended vegetables. Stir well until fully incorporated.

Step 6

Add vegetable oil, salt, and the crumbled vegetable bouillon cube into the mixture. Gradually add the remaining cup of water, stirring continually to achieve a slightly loose consistency.

Step 7

Prepare your steaming equipment by filling a large pot with water just below a steaming rack or insert. Bring water to a boil.

Step 8

Cut the foil sheets into rectangles about 10x12 inches each. Scoop about 1 cup of the bean mixture onto each foil sheet. Fold the foil carefully to create sealed parcels.

Step 9

Place the filled foil packets on the steaming rack in the pot. Ensure they are not submerged in the boiling water.

Step 10

Cover the pot and steam for 60-75 minutes. Check occasionally to ensure there is enough water in the pot, adding more hot water if necessary.

Step 11

After steaming, carefully remove the Moi Moi packages from the pot using tongs. Allow them to cool for a few minutes before serving.

Step 12

Unwrap each parcel gently; serve the Moi Moi warm as a dish on its own or accompany it with rice, salad, or bread.
