Ingredients

  • 2 sheets Puff pastry sheets
  • 4 pieces Vegetarian sausages
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 50 g Breadcrumbs
  • 1 large Egg
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley
  • 1 tbsp Olive oil

Directions

Step 1

Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Finely chop the onion and garlic cloves.

Step 3

Heat up olive oil in a pan over medium heat, then add the chopped onion and garlic. Cook until softened, about 5 minutes.

Step 4

In a bowl, crumble the vegetarian sausages and mix them with the cooked onion and garlic, breadcrumbs, salt, pepper, and parsley.

Step 5

Beat the egg in a separate small bowl and add half of it to the sausage mixture. Reserve the other half for egg wash.

Step 6

Unroll the puff pastry sheets and cut each sheet into three equal sections, resulting in six sections in total.

Step 7

Divide the sausage mixture evenly onto the edge of each pastry section and shape into logs.

Step 8

Brush the opposite edge of the pastry with a bit of the beaten egg to help seal the rolls.

Step 9

Roll the pastry over the filling and gently press the edges to seal. Place the sealed edge down onto the prepared baking tray.

Step 10

Cut each roll into four mini sausage rolls, making a total of 24 pieces.

Step 11

Brush all the rolls with the remaining egg wash.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Step 13

Let cool slightly before serving.
