  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 10 pieces Skewers
  • 1 cup Plain yogurt
  • 0.5 cup Fresh mint leaves
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt (for sauce)
  • 0.25 teaspoon Ground black pepper (for sauce)

Directions

Step 1

Preheat the grill or oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.

Step 2

Cut the zucchini, red bell pepper, yellow bell pepper, and red onion into evenly sized, bite-sized pieces. Aim for pieces roughly 1 inch in size.

Place the zucchini, bell peppers, and onion pieces in a large bowl. Add the cherry tomatoes.
