  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning
  • 1 cup Salsa
  • 1 cup Cheddar cheese, shredded
  • 1 large Avocado, sliced
  • 0.5 cup Cilantro, chopped
  • 1 whole Lime, cut into wedges

Directions

Step 1

Begin by cooking the brown rice. In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, cover, and reduce heat to low. Let it simmer for 18-20 minutes, or until the rice is tender and water is absorbed. Set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are softened, about 5 minutes.
