Ingredients

  • 4 pieces Large flour tortillas
  • 1 pound Plant-based ground beef (e.g., Beyond Meat or similar)
  • 1 cup Black beans, cooked and drained
  • 1 cup Cotija cheese, crumbled
  • 1 large Avocado, sliced
  • 1 medium Red bell pepper, diced
  • 1 medium Onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Salsa (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion, red bell pepper, and minced garlic to the skillet. Sauté for about 5 minutes, or until the onion is translucent.

Step 3

Add the plant-based ground beef to the skillet. Cook for about 8-10 minutes, breaking up the meat, until it's browned and heated through.

Step 4

Stir in the chili powder, cumin, salt, and black pepper. Mix well to coat the ground beef evenly.

Step 5

Add the black beans to the skillet. Stir to combine and heat for an additional 2 minutes.

Step 6

Warm the flour tortillas in a separate pan or microwave them for about 20 seconds until soft.

Step 7

To assemble each burrito, place a tortilla on a flat surface. Spoon an even amount of the ground beef and bean mixture onto the center of the tortilla.

Step 8

Top with crumbled Cotija cheese, sliced avocado, and sprinkle with fresh cilantro.

Step 9

Add a dollop of sour cream and salsa if desired.

Step 10

Fold in the sides of the tortilla and roll it up tightly to form a burrito.

Step 11

Serve the burritos warm, and enjoy!
