  • 250 ml vegetable broth
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger
  • 3 cloves garlic
  • 2 stalks green onions
  • 2 tablespoons doubanjiang (fermented broad bean paste)
  • 1 tablespoon silken or fermented black beans (optional)
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Directions

Step 1

Dice the tofu into 1-inch cubes.

Step 2

In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry and set aside.

Step 3

Mince the ginger and garlic. Chop the green onions, keeping the white and green parts separate.

Step 4

In a large non-stick pan or wok, heat the vegetable oil over medium heat.

Add the ginger, garlic, and the white parts of the green onions, sautéing for about 30 seconds until fragrant.
