Ingredients

  • 300 g elbow macaroni
  • 2 tbsp olive oil
  • 250 g plant-based ground meat
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 200 g yellow cheddar cheese, shredded
  • 100 g Monterey Jack cheese, shredded
  • 1 tsp ground mustard
  • 300 ml milk
  • 50 g butter
  • 2 tbsp flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 50 g breadcrumbs
  • 2 tbsp parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Cook the elbow macaroni in a large pot of boiling salted water according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent and fragrant, about 5 minutes.

Add the plant-based ground meat to the skillet, cooking and stirring occasionally for about 5-7 minutes or until browned and cooked through. Remove from heat and set aside.
