Ingredients

  • 250 grams King oyster mushrooms
  • 100 grams Unsalted butter
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 2 Shallots, finely chopped
  • 1 tablespoon Fresh thyme
  • 3 tablespoons Soy sauce
  • 100 milliliters Red wine
  • 100 milliliters Vegetable broth
  • 1 teaspoon Balsamic vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Nutritional yeast
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Clean the king oyster mushrooms and cut them lengthwise into thick slices, mimicking the size of bone marrow.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the mushroom slices and cook for about 6-8 minutes, turning occasionally until they are golden and tender. Remove from the skillet and set aside.

Step 3

In the same skillet, add unsalted butter over medium heat. Once melted, add the minced garlic and shallots and sauté for about 3 minutes until fragrant and softened.

Add the fresh thyme to the skillet and stir it in with the garlic and shallots.
