Ingredients

  • 1 medium (shredded) Carrots
  • 2 cups (shredded) Green cabbage
  • 8 ounces (crumbled) Firm tofu
  • 2 stalks (finely chopped) Green onions
  • 3 cloves (minced) Garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce (vegetarian)
  • 0.5 teaspoons Ground black pepper
  • 25 sheets Spring roll wrappers
  • 2 cups (for frying) Cooking oil
  • 0.25 cup (for sealing wrappers) Water

Directions

Step 1

In a large mixing bowl, combine the shredded carrots, shredded cabbage, crumbled tofu, chopped green onions, and minced garlic.

Step 2

Add soy sauce, vegetarian oyster sauce, and ground black pepper to the bowl. Mix everything thoroughly until well combined.

Step 3

Take one spring roll wrapper and place it on a flat surface with one corner facing you to form a diamond shape.

Step 4

Spoon about 1 to 2 tablespoons of the vegetable filling near the bottom corner of the wrapper.

Step 5

Fold the bottom corner over the filling, tucking it snugly. Fold in the two side corners, then roll the wrapper tightly towards the top corner.

Step 6

Dip your fingertip in water and moisten the top corner to seal the lumpia fully. Repeat this process until all the filling is used.

Step 7

Heat 2 cups of cooking oil in a deep skillet or frying pan over medium-high heat. To check if the oil is ready, drop a small piece of wrapper into the oil—it should sizzle immediately.

Step 8

Carefully place the lumpia in the hot oil in small batches, seam side down, to avoid overcrowding. Fry for 3 to 5 minutes per side or until crisp and golden brown.

Step 9

Transfer the fried lumpia to a plate lined with paper towels to drain excess oil.

Step 10

Serve warm with your favorite dipping sauce, such as sweet chili sauce, or vinegar with minced garlic and chili.
