  • 1 can (14 oz) heart of palm, drained and shredded

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 0.5 cup carrots, diced
  • 0.5 cup green peas, frozen
  • 2 stalks green onions, chopped
  • 2 egg, beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preparing your ingredients: make sure the jasmine rice is cooked and cooled, the heart of palm is shredded, and all vegetables are chopped and ready to use.

Step 2

In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

Step 3

Add the beaten eggs and scramble until just set. Remove the eggs from the pan and set aside.
