  • 2 tablespoons Tomato paste
  • 400 milliliters Coconut milk
  • 0.5 cup Raw cashews
  • 1 cup Water
  • 1 cup Carrot, chopped
  • 1 cup Potato, diced
  • 1 cup Cauliflower florets
  • 1 cup Green beans, chopped
  • 0.5 cup Frozen green peas
  • 1 teaspoon Salt
  • 0.25 cup Fresh cilantro, chopped
  • 0 Cooked basmati rice or naan (for serving)

Directions

Step 1

In a large pan, heat the vegetable oil over medium heat.

Add the diced onion and sauté for 5-7 minutes until soft and golden brown.

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.
