Ingredients

  • 500 g Korean rice cakes (tteok)
  • 2 cups Vegetable broth
  • 3 tbsp Gochujang (Korean chili paste)
  • 1 tbsp Gochugaru (Korean chili flakes)
  • 2 tbsp Soy sauce
  • 2 tbsp Sugar
  • 3 cloves Garlic, minced
  • 4 units Green onions, chopped
  • 1 medium Carrot, sliced
  • 1 cup Cabbage, chopped
  • 200 g Firm tofu, cubed
  • 1 tbsp Sesame oil
  • 1 tbsp Sesame seeds

Directions

Step 1

Soak the Korean rice cakes in warm water for about 10 minutes if they are refrigerated or frozen, then drain them.

Step 2

In a large pan over medium heat, combine the vegetable broth, gochujang, gochugaru, soy sauce, sugar, and minced garlic. Stir well until the gochujang is fully dissolved.

Step 3

Add the soaked rice cakes to the pan. Stir occasionally and let the mixture come to a boil.

Step 4

Once boiling, reduce the heat to medium-low and simmer for about 10 minutes or until the rice cakes are soft and the sauce thickens. Stir occasionally to prevent sticking.

Step 5

Add the chopped green onions, sliced carrot, chopped cabbage, and cubed tofu to the pan. Continue to cook for another 5 minutes, or until the vegetables are just tender.

Step 6

Drizzle the sesame oil over the tteokbokki and stir gently to mix.

Step 7

Turn off the heat and transfer the tteokbokki to a serving dish. Sprinkle with sesame seeds for garnish.

Step 8

Serve immediately while hot. Enjoy your delicious Vegetarian Korean Rice Cake!
