Finely chop the kimchi and set aside in a mixing bowl.
Cut the firm tofu into small cubes and then crumble it by hand or with a fork. Add it to the bowl with the kimchi.
Trim and finely slice the green onions. Peel and mince the garlic. Add both to the kimchi and tofu mixture.
Add soy sauce, sesame oil, salt, and ground black pepper to the bowl. Mix well to combine all the ingredients evenly.
Place a dumpling wrapper on a clean work surface and spoon about one tablespoon of filling in the center.
Moisten the edges of the wrapper with a small amount of water to help seal the dumpling.
Fold the wrapper over the filling to create a half-moon shape. Pinch the edges together to seal, ensuring there are no air bubbles. Repeat with remaining wrappers and filling.
Heat one tablespoon of vegetable oil in a large non-stick skillet over medium-high heat.
Place dumplings in the skillet, flat side down, in a single layer. Fry for 2-3 minutes until the bottoms are golden brown.
Carefully add 1/4 cup of water to the skillet and immediately cover with a lid. Allow the dumplings to steam for 5-6 minutes or until the water has evaporated.
Remove the lid and continue to fry for another 1-2 minutes to recrisp the bottoms.
Transfer the dumplings to a platter. Serve hot with your choice of dipping sauce.
