  • 240 ml Buttermilk
  • 15 ml Hot sauce
  • 240 g All-purpose flour
  • 60 g Cornstarch
  • 5 g Baking powder
  • 10 g Garlic powder
  • 10 g Onion powder
  • 5 g Paprika
  • 5 g Salt
  • 2 g Black pepper
  • 60 ml Milk
  • 500 ml Vegetable oil
  • 4 Burger buns
  • 120 g Mayonnaise
  • 30 ml Sriracha sauce
  • 200 g Cabbage
  • 1 large Carrot
  • 15 ml Apple cider vinegar
  • 10 g Sugar

Directions

Step 1

Cut the cauliflower into thick slices (about 2 cm) to create 'steaks'. Set aside any small florets for other uses.

Step 2

In a large bowl, mix the buttermilk and hot sauce. Submerge the cauliflower steaks in this mixture and marinate for 20 minutes.

In another bowl, combine the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.

Gradually add milk to the dry ingredients until you have a thick batter-like consistency.
