Ingredients

  • 400 ml Coconut milk, full-fat
  • 200 ml Heavy cream
  • 80 g Erythritol
  • 1 tsp Vanilla extract
  • 0.5 tsp Xanthan gum
  • 150 g Dark chocolate (minimum 85% cacao)
  • 2 tbsp Coconut oil
  • 50 g Chopped nuts (optional)

Directions

Step 1

In a medium saucepan over medium heat, combine the coconut milk and heavy cream. Stir occasionally until it begins to steam but do not let it boil.

Step 2

Whisk in erythritol until completely dissolved, then add vanilla extract and xanthan gum. Continue to whisk until the mixture thickens slightly.

Step 3

Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours, or until completely chilled.

Step 4

Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
