Ingredients

  • 2 cups canned chickpeas (drained and rinsed)
  • 0.5 cup fresh cilantro leaves
  • 0.5 cup fresh parsley leaves
  • 1 small onion
  • 3 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon allspice
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup bread crumbs
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 0.5 cup plain Greek yogurt, for serving

Directions

Step 1

Place the drained chickpeas, cilantro leaves, parsley leaves, onion, and garlic cloves in a food processor. Pulse until the mixture is coarsely ground.

Step 2

Add the ground cumin, ground coriander, paprika, allspice, cayenne pepper, salt, and black pepper to the mixture in the food processor. Pulse again to combine.

Step 3

Transfer the chickpea mixture to a mixing bowl and stir in the bread crumbs and lemon juice. Mix well until the mixture holds together.

Step 4

Shape the mixture into 12 equal-sized oval patties.

Step 5

Heat a tablespoon of olive oil in a large non-stick skillet over medium heat. Add some of the patties, making sure not to overcrowd the pan.

Cook the patties for about 3-4 minutes on each side or until golden brown and warmed through. You may need to add more oil as necessary.
