Ingredients

  • 3 medium carrots
  • 2 medium parsnips
  • 4 medium potatoes
  • 1 medium turnip
  • 250 grams button mushrooms
  • 1 large yellow onion
  • 3 whole garlic cloves
  • 1 liter vegetable broth
  • 2 whole bay leaves
  • 5 whole allspice berries
  • 5 whole black peppercorns
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and chop the carrots, parsnips, potatoes, and turnip into large chunks.

Step 2

Clean and halve the button mushrooms.

Step 3

Peel and slice the onion and garlic cloves.

Step 4

In a large pot, heat the olive oil over medium heat. Add the sliced onion and garlic and sauté until the onion is translucent, about 5 minutes.

Increase the heat to medium-high and add the mushrooms to the pot. Cook for another 5 minutes until the mushrooms have released their moisture and are slightly browned.
