Ingredients

  • 2 pieces eggplant
  • 1 bunch bok choy
  • 200 grams string beans
  • 1 piece banana heart
  • 1 cup peanut butter
  • 1 cup coconut milk
  • 3 cups vegetable broth
  • 2 tablespoons annatto seeds
  • 1 cup water
  • 4 cloves garlic
  • 1 medium onion
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons oil

Directions

Step 1

Slice the eggplant into quarters lengthwise, then cut into 2-inch pieces. Trim the ends of the string beans and cut them into 2-3 inch pieces. Slice the banana heart into thin rounds and set all vegetables aside.

Step 2

In a bowl, soak the annatto seeds in 1 cup of warm water for about 15 minutes to draw out the color. Strain and discard the seeds, keeping the colored water.

In a large pot, heat the oil over medium heat. Sauté chopped onions until translucent, about 3 minutes. Add the minced garlic and continue to sauté for another 2 minutes until fragrant.
