  • 1 cup Peanut butter
  • 4 medium Tomatoes
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 1 inch piece Ginger
  • 2 medium Carrots
  • 1 medium Sweet potato
  • 2 cups Spinach
  • 4 cups Vegetable broth
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional)
  • 4 cups Cooked white rice

Directions

Step 1

Prepare the vegetables by washing and peeling the carrots and sweet potato. Dice the carrots and sweet potato into bite-sized pieces. Roughly chop the onion and tomatoes. Mince the garlic and ginger.

Step 2

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Stir in the garlic and ginger and cook for 1 minute until fragrant.
