  • 1 cup Black beans, canned, drained and rinsed
  • 1 cup Brown rice, cooked
  • 0.5 cup Breadcrumbs
  • 0.5 cup Onion, finely chopped
  • 0.5 cup Carrot, grated
  • 0.5 cup Cheddar cheese, grated
  • 1 large Egg
  • 1 tsp Garlic powder
  • 0.5 tsp Paprika
  • 0.5 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving a few chunks for texture.

Add the cooked brown rice, breadcrumbs, finely chopped onion, grated carrot, grated cheddar cheese, and one large egg to the bowl.
