Ingredients

  • 4 cups cooked Japanese short-grain rice
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 medium carrot, finely diced
  • 0.5 cup green peas, frozen or fresh
  • 3 stalks green onions, sliced
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 2 large egg, beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Ensure the rice is cooked and cooled before starting. It's best if the rice is prepared a day in advance and refrigerated, as this helps prevent it from becoming mushy when fried.

Step 2

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the beaten eggs and scramble until just set. Remove the scrambled eggs from the pan and set aside.
