Ingredients

  • 1 cup chickpeas (canned or cooked)
  • 1 cup mushrooms
  • 0.75 cup oats (rolled or quick-cooking)
  • 1 small onion
  • 1 garlic clove
  • 1 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Drain and rinse the chickpeas if using canned. Mash them in a large bowl until mostly smooth, with a few chunks for texture.

Step 2

Finely chop the mushrooms, onion, and garlic. Heat 1 tablespoon of olive oil in a skillet over medium heat, then sauté the onion and garlic for about 2 minutes until translucent. Add the mushrooms and continue to cook until the mushrooms are softened and the mixture is fragrant, about 5 more minutes.

In a food processor, pulse the oats into a coarse flour. Add the oats to the mashed chickpeas along with the cooked vegetable mixture, soy sauce, egg, paprika, sage, thyme, black pepper, and salt.
