Ingredients

  • 8 oz wide egg noodles
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 large carrots, sliced
  • 2 medium celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken-flavored vegetarian broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 oz chicken-style seitan, shredded
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Cook the egg noodles according to package instructions until al dente. Drain and set aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the sliced carrots and celery, and continue to cook for another 5 minutes until the vegetables start to soften.

Stir in the minced garlic and sauté for another minute until fragrant.
