Ingredients

  • 2 pieces whole wheat bagels
  • 4 slices vegetarian ham slices
  • 4 slices vegetarian cheese slices
  • 4 tablespoons cream cheese
  • 1 cup baby spinach leaves
  • 1 small, sliced tomato
  • 0.5 small, thinly sliced red onion
  • 2 tablespoons butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Slice the bagels in half horizontally and set them aside.

Step 2

In a non-stick skillet over medium heat, add 1 tablespoon of butter and let it melt.

Step 3

Place the sliced bagels, cut side down, into the skillet and toast for 2-3 minutes or until golden brown. Remove and set aside.

Step 4

In the same skillet, melt the remaining 1 tablespoon of butter.

Step 5

Add the vegetarian ham slices and cook for 1-2 minutes on each side until they are slightly browned and warmed through. Remove from heat.

Spread 1 tablespoon of cream cheese on each cut side of the toasted bagels.
