Ingredients

  • 1 large Red bell pepper
  • 2 medium Zucchini
  • 20 Cherry tomatoes
  • 1 large Red onion
  • 10 medium Mushrooms
  • 4 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 10 Wooden skewers

Directions

Step 1

Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

Wash and cut the red bell pepper into 1-inch squares, the zucchini into thick rounds, and the red onion into similar size chunks.

Step 3

In a large mixing bowl, combine the olive oil, garlic powder, dried oregano, dried basil, salt, black pepper, and lemon juice to form a marinade.

Step 4

Add the red bell pepper, zucchini, cherry tomatoes, red onion, and mushrooms to the bowl. Toss them in the marinade until well coated. Let them marinate for about 15 minutes.

Step 5

Thread the vegetables onto the skewers, alternating between the different types to ensure a good mix of colors and flavors on each one.

Step 6

Preheat the grill to medium-high heat. If using an indoor grill pan, heat it over medium-high on the stove.

Step 7

Place the skewers on the grill. Cook for about 10-15 minutes, turning every few minutes until the vegetables are tender and lightly charred.

Step 8

Remove the skewers from the grill and let them cool slightly before serving.

Step 9

Serve the grilled vegetable kebabs warm as a delightful appetizer or a healthy side dish.
