Directions

Step 1

Rinse the Japanese short-grain rice under cold water until the water runs clear. This removes excess starch.

Combine rice and water in a rice cooker or heavy-bottomed pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for approximately 20 minutes or until the water is absorbed and the rice is tender.
