  • 1 large Egg
  • 2 Garlic cloves, minced
  • 2 tablespoons Chopped fresh parsley
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Red onion, cut into small wedges
  • 1 large Bell pepper, cut into 1-inch pieces
  • 1 medium Zucchini, thickly sliced
  • 12 Cherry tomatoes
  • 8 Wooden skewers, soaked in water for 30 minutes

Directions

Step 1

Preheat your grill to medium-high heat.

In a large mixing bowl, mash the chickpeas with a fork until smooth but still slightly chunky.
