Ingredients

  • 4 slices whole grain bread slices
  • 4 slices vegetarian ham slices
  • 4 slices cheddar cheese
  • 2 tablespoons unsalted butter
  • 2 teaspoons Dijon mustard
  • 1 cup baby spinach leaves
  • 1 medium, sliced ripe tomato
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by lightly spreading a thin layer of butter on one side of each bread slice using half of the butter quantity provided.

Step 2

Take two of the bread slices and spread about a teaspoon of Dijon mustard on the unbuttered side of each slice.

Step 3

On top of the mustard, lay two slices of vegetarian ham on each bottom slice.

Step 4

Next, place two slices of cheddar cheese over the vegetarian ham on each sandwich.

Step 5

Add a handful of baby spinach leaves and a few slices of tomato on each cheese layer.

Step 6

Sprinkle a pinch of black pepper over the tomatoes.

Step 7

Place the remaining bread slices, buttered side up, on top of the sandwich stacks.

Step 8

Heat a non-stick skillet over medium heat and add the remaining butter.

Step 9

Once the butter is melted and sizzling, gently place each assembled sandwich into the skillet.

Step 10

Grill each sandwich for about 3-4 minutes on one side, then carefully flip with a spatula. Grill for another 3-4 minutes until the bread is golden brown and the cheese is melted.

Step 11

Remove the sandwiches from the skillet and allow them to cool slightly so the cheese can set.

Step 12

Cut each sandwich in half and serve warm.
